Corned Beef and Cabbage

Recipe serves 4-6 people depending on hunger levels.

Ingredients:
3 pounds of corned beef brisket with spice packet
10 small red potatoes (about 1 pound), cut in half
5 carrots (about 2 pounds), peeled and sliced into 3 inch pieces
3 cloves of garlic, minced
32 oz. box of beef broth (4 cups)
1 can of Guinness Draught beer (14.9 oz)
1 head of cabbage, cut into 8 wedges

1. Place corned beef in large pot and add spice packet, minced garlic, beef broth, and beer. Cover pot, bring to boil, then simmer on low. Simmer for 50 minutes per pound or until fork tender.

2. Add carrots and potatoes during last 30 minutes of cooking time. Add cabbage during last 15 minutes of cooking time.

3. Remove meat and place on serving platter. Cover and let it rest for 15 minutes. Place vegetable in separate bowl with broth from the pot.

4. Slice meat along grain and serve with vegetables and broth. Enjoy!
